Our Peanut Butter Cups Recipe

To celebrate World Chocolate day today we thought we'd share one of our very own Cafe.uneeka recipes using Josh's Chocolate ... so here is the Peanut Butter Cups recipe! 

Josh's Chocolate     

Peanut Butter Cups Recipe

This recipe roughly makes 8-10 Cups! The Cups that we make in the Cafe are Vegan & Gluten Free (using Vegan/ Gluten Free Chocolate) but of course if you don't want them to be then use the chocolate of your choice!

Ingredients:

10 x Mini Silicone Cupcake Cases (or just regular Cupcake Cases)

Bottom Layer: 1/3 Cup of Peanut Butter (we use Freda's Smooth Original Peanut Butter - available to buy in our Cafe)

2.5 tbsps Coconut Oil

1 tsp Vanilla Extract 

1 x 90g Bar of Josh's Chocolate

2 tbsps Maple Syrup

Top Layer: 1/3 Cup of Peanut Butter

2 tbsps Coconut Oil 

1 tsp Maple Syrup

1 tsp Vanilla Extract 

A pinch of Cornish Sea Salt

Step 1 -  The first step is contributing towards the bottom layer, for this you need to melt the Coconut Oil and the Josh's Chocolate Bar (separately) and then mix all 4 ingredients together until combined.

Step 2 -   Then you'll need to add the mix to your cases (whichever size you choose). Aim to add about 1tsp of this bottom layer mixture to the cups, you'll need to leave some mixture left over to put on top later on! Once you've filled the cups to your desired amount put the tray or plate with the partially filled cases in the fridge to set (for only about 10-15 minutes) whilst you're making the next layer. 

Step 3 -   Now onto the next layer, this is the predominantly Peanut Butter layer that'll sit in the middle of the cups and are essentially the main filling. For this layer you'll need to melt the Coconut Oil again, add this to the Peanut Butter, Vanilla Extract and a pinch of salt and mix once again until the mixture has combined. 

Step 4 -   Retrieve the half filled Cups from the fridge and add roughly 1tsp of the Peanut Butter Mix on top of the chocolate cups, then put the cups (which now have two layers) back into the fridge to set for about 20 minutes. 

Step 5 -    Once they have set for 20 minutes them add the remaining Bottom Layer mixture on the top of the Peanut Butter mixture and a sprinkling of Sea Salt. Put the Cups back into the fridge for another hour so that the mixture is fully set and then dig in! Yum yum!
